General Update

Hi all and anyone reading this.

Here is a general update on my life as it pertains to my culinary passion. I have fallen away from creating recipes and posting them, and instead I have been focusing on creating a business plan for a healthy cafe, which ideally will be ready for an opening within 5 years, if not sooner.  A girlfriend and I put our brains together and have some pretty exciting cafe concepts brewing. Think Raw Till 4 concept available for any diet out there, mixed with Ayurvedic methods of eating, all while keeping it local, sustainable, and all natural!!

I couldn’t be more happy with how things are going so far.  We are at the very beginning stages, but our brains are practically exploding with all the potential we sense as we delve into this endeavor together. We aren’t putting any shortage of love, intention, and mindfulness into this process. We will start to post as a team on the blog, versus it just being me!

In the meanwhile I have been posting the things I make on my instagram as I have found it very hard to find the time to dedicating myself with uploading photos and writing a whole blog entry for one recipe that I make. I will start to update this a little more regularly though as this process of opening up a Juice bar and cafe starts to develop more.

Spicy Lentil Zucchini Stir Fry

Howdy Juicy People!

I’m excited to write my first savory dish post! This one was made up step by step, and luckily, I got pictures! I thought to myself “Maybe this will taste good and I’ll get to write a blog post!” Sure enough it was scrumptious! This is a great dish to relish in the last moments of summer greatness while giving your body that warm feeling from the spices to bring in the winter season. Zucchini symbolizes summer, lentils symbolizes fall/winter (I think of warm lentil soups). I had both so I meshed them together!

 

I used sprouted lentils, which I learned to do from this site here > (http://www.theleangreenbean.com/how-to-sprout-lentils/) It has a great deal of benefits! It helps digest better without giving as much gas, and it unlocks key nutrients that are beneficial that are otherwise not available. It takes about 2 days, and is very low maintenance to do. Eating sprouted lentils has helped me greatly!

 

Onto the greatness!

 

Spicy Lentil Zucchini Stir Fry

Ingredients:

  • 1 Tbsp Coconut Oil
  • 1/4 C chopped red onion
  • 2 cups halved zucchini (one medium zucchini makes two cups)
  • 1/4 tsp cayenne (divided)
  • 1/4 tsp ginger powder (divided)
  • 1/4 tsp garlic powder (divided)
  • 1/8 tsp iodized salt (divided)
  • 2 Tbsp nutritional yeast (divided)
  • 1/2 C sprouted lentils
  • 2 Tbsp filtered water

Optional toppings: dill, cilantro, parsley, lime.

Directions:

1. In a non stick pan turn on medium high heat and add coconut oil. Once hot, add the onions and let sit until fragrant.

2. While pan/onions heat in a bowl add one cup of halved zucchini and half of the spices/powders. Top it with second cup, and add the remaining spices (add more or less depending on your taste) (do not mix the zucchini and spices together)

3. Once onions are heated and smelling good add in zucchini mixture and let sit for 30 seconds, stirring there on every 1 minute until zucchini becomes tender

4. While Zucchini cooks, have a small non stick pan heating up and add lentils. Toast for about 2 minutes, then add 2 tbsp water and cover with lid, letting lentils soak up all the water. Then remove from heat.

5. Once Lentils are done, throw over Zucchini and stir for about 1-2 minutes to heat together.

6. Serve with dill, cilantro, parsley, or lime

Sunny Peach Smoothie

Now I won’t lie, I will never lie. To be honest (ha), I’m not very good at lying, nor do I ever gravitate to doing it! What I am capable of is transparency and openness. What is all this moral blabber you ask? It’s me preparing you for a smoothie recipe that I did not think of all on my own.

You see, I follow March against Monsanto on Facebook and they posted a smoothie recipe from here > (collective evolution) and well, I wanted to make it but I had some missing ingredients. The site give details on the benefits of turmeric if you’d like to read.

The version I made was pretty mellow and not too terribly sweet. If you wanted I would suggest adding a tablespoon at most of your favorite liquid sweetener.

I used sunflower milk because it’s the last kind I made. If you have about a cup of unsalted, raw sunflower seeds and would like to make your own for this recipe then blend one cup sunflower seeds with four cups of filtered water for about 1-2 minutes and strain through a nut/milk bag, cheese cloth, or fine mesh strainer. Store in container with a lid in the fridge. I use an old juice container that holds exactly four cups.

  • Sunny Peach Smoothie

    Yields: nearly 2 cups
    Time: 5-10 minutes

Ingredients:
1 cup sunflower milk (or any that you have)
1/2 cup frozen peaches
1 fresh fresh banana (you can use froEn if that’s what you have)
1 tbsp coconut oil
1/2 tsp turmeric (powder or fresh)
1/2 tsp cinnamon powder
1/2 tsp ginger (powder or fresh)
1 tsp mesquite powder
1 tsp chia seeds

Directions:
I like to add my ingredients in the blender in a special order so that powders/oils don’t get stuck on the bottom of the blender. (I think it works…)

Fruit
Sweetener (if your adding one)
Spices
Oil
